Power Foods

In this time of “super extended family time,” we’re cooking a lot at home! In the midst of both my husband and I working from home – and recent news of our daughter being here with us until the end of May – we need easy meals that boost immunity and provide sustained energy. Spinach –

Beets –
 
Roasted, grilled, canned – these beauties are a gem. Beets are a powerful source of nutrients and perfectly served as a side to roasted chicken or topping to a salad.
